Baileys Chocolate Truffles

It's so easy to make these truffles - all you need is heavy cream, chocolate, butter and Baileys!

The holidays are here and that means get-togethers, parties, and lots of food and booze!

Every year we host our annual Friendsmas party and enjoy a pot-luck dinner, specialty cocktails and delectable desserts. I’ve never been one for a huge dessert after a big meal so this year I wanted to create bite-sized treats that everyone could enjoy and still have room for….and they did!

All you need to create these truffles are 4 things…dark chocolate, heavy cream, butter and of course, Baileys.

You’ll start by melting the butter and cream together in a saucepan until boiling, at which point you’ll pour over your dark chocolate in a small bowl. After a few minutes, grab a spatula and stir until all chocolate is melted and then mix in the Baileys until smooth. Cover and place bowl into the refrigerator for 3-4 hours.

When time is up, all you have to do is take out the bowl, scoop out some chocolate and use your hands to shape into a ball. Once it’s round, roll around in your favorite sprinkles or nuts and you’re done! Store in a cute tin in the refrigerator until ready to serve.

Viola! You’ve got yourself a bite-sized treat that any chocolate lover would die for.

Baileys Chocolate Truffles


  • 5 Tbsp Baileys Irish Cream
  • 10-16 oz dark chocolate chips
  • 2 Tbsp butter, chopped
  • 1/2 cup heavy cream


  1. Place chocolate chips in a small bowl and set aside.
  2. Heat butter and cream over high heat until boiling. Remove and pour into bowl with chocolate chips. Let it sit for 2-3 minutes.
  3. Using a spatula, stir chips and liquid together until smooth, add Baileys and continue to stir until mixed well. If chocolate doesn’t fully melt, place in microwave for 20 second increments, stirring each time, until smooth.
  4. Cover and place mixture in refrigerator for 3-4 hours.
  5. Take mixture out of refrigerator and grab a cookie or ice cream scoop. Gather some chocolate and use your hands to roll into a ball. This will get a little messy as the chocolate warms up in your hands.
  6. Roll in chopped nuts or sprinkles and store in refrigerator until ready to serve!
