Overnight Breakfast Chia Pudding

Some mornings are tougher than others to get going and out the door so I’m always planning the night before.

Clothes are laid out for the next day, bags are packed and lunches are made. To speed things up even faster take 5 minutes before bed and mix together this healthy and delicious breakfast recipe.

All you need is 1 cup of nut milk (I like unsweetened vanilla cashew milk), 1/2 cup chia seeds, 1/4 teaspoon vanilla extract and a few drops of liquid stevia.

Pour milk, vanilla and stevia into a small tupperware container and add chia seeds. Stir for 1 minute, cover and place in refrigerator. When you get up in the morning, just take it out, add some toppings and devour!

The flavor combinations are really endless, but here are a few of my faves from fruit to savory to sweet:

  • Blueberries, Almond Slivers
  • Strawberries, Unsweetened Shredded Coconut
  • Diced Avocado
  • Granola, Raisins
  • Cacao Nibs, Cashews
  • Cranberries, Pistachios
  • Banana, Peanut Butter
  • Bacon, Shredded Cheese

Overnight Breakfast Chia Pudding

Serves 2.

Ingredients:

  • 1 cup nut milk, unsweetened
  • 1/2 cup chia seeds
  • 1/4 teaspoon vanilla extract
  • 5 stevia extract drops

Directions:

Place nut milk, vanilla extract and stevia drops in small tupperware container. Pour in chia seeds and stir for 1 minute, mixing well. Cover and refrigerate overnight (or at least 4 hours). Spoon into bowls in the morning and add some of your favorite toppings! Enjoy!
