Make your own Mint Chocolate Freezer Bites

Every night, before I go to bed, I have a piece of dark chocolate.

I started doing this after the birth of my first child. I was working so hard on losing weight and that bite of chocolate was my reward at the end of the day for hitting my calorie goals and doing my workout.

That was almost 7 years ago.

I typically buy a bar of chocolate, keep it in the refrigerator (I love cold chocolate) and break of a square each night. That’s my routine and I love it.

Make your own chocolate bites with anything inside!

For this year’s Choctoberfest I received so much decadent chocolate, I thought it would be the perfect time to experiment making my own and OMG I am so glad I did. Not only was it SUPER EASY, but I can make whatever I want so there’s a variety at my fingertips for a fraction of the cost.

This year I am highlighting Barlean’s Chocolate Mint Omega Swirl. I actually used this last year too because it’s so incredible. Click here for the Chocolate Mint Green Smoothie recipe.

Their Omega Swirl is a mix of flaxseed oil, evening primrose oil and special plant phytonutrients which supplies you with Omega’s 3, 6, 9 and helps promote hormonal balance. It’s so good for you, but what’s even better is that you don’t taste the oil…just the chocolate mint! It’s also sugar-free, vegan, gluten-free and non-GMO! This recipe is so easy to make. All you need is an ice cube tray, 1 cup of your favorite chocolate chips, 1 Tablespoon Barlean’s Chocolate Mint Omega Swirl, 1 Tablespoon coconut oil and some add-ins like fruit, nuts or marshmallows.

Yummy chocolate mint bites you can make at home

Chocolate Mint Bites


  • 1 cup dark chocolate chips
  • 1 Tablespoon coconut oil
  • 1 Tablespoon Barlean’s Chocolate Chip Omega Swirl
  • chopped nuts, mini marshmallows and halved maraschino cherries
  • ice cube tray with lid (I used the OXO tray since I had it from when I made baby food).


  1. Microwave chocolate chips with coconut oil in 30 second intervals until smooth. Use a glass measuring cup for easy pouring.
  2. Pour a little bit of chocolate into each cube and brush up sides.
  3. Freeze for 5 minutes.
  4. Add in treats such as chopped nuts, cherries and marshmallows and pour remaining chocolate on top.
  5. Freeze for 1 hour. Keep in the freezer and enjoy one any time of the day or night!

  1. That omega swirl is so good that I don’t know if I would require an add in at all but perhaps some rice cereal for crunch would be nice.
