Now that we’ve listed the prizes and all the other amazing bloggers, let’s talk about that Margarita Popcorn!

I am a BIG lover of margaritas and combining the refreshing lime flavors with my favorite snack just seemed like a perfectly logical thing to do.

I have to warn you - THIS POPCORN IS HIGHLY ADDICTIVE!

I literally had to throw away the rest of this popcorn because I couldn’t stop myself from eating it. BUT, if you’re throwing a cookout party, then it’s the perfect snack for all your guests while you’re waiting for your grill to heat up. 🙂

The coolest part about this snack is that it’s made with Barlean’s Butter Flavored Coconut Oil which is our favorite butter 1:1 substitute! We use it all the time in our Chocolate Chip Breakfast Mug Cake and every Saturday when we make gluten-free pancakes. Yum!

This coconut oil doesn’t taste like coconut AT ALL! It’s non-GMO, organic and tastes just like real butter. It’s the perfect substitute for any dish you bake but it has all the benefits of coconut oil like MCTs (medium-chain triglycerides) which have benefits such as: being easily digested, combating harmful bacteria in our gut and they contain anti-oxidants which include helping heart health, brain health and helping with obesity prevention. Now that you’ve had your lesson on coconut oil, let’s talk about this popcorn! This recipe is so simple. Start off with 16 cups of freshly popped popcorn. You can buy pre-popped popcorn if you like, but just make sure it’s free of any salt, seasonings and flavors.

Next, you’re going to take a small saucepan and mix all the margarita flavors together with the butter-flavored coconut oil and simply pour on top of your popcorn. Then you’ll add in a handful of crushed lime corn chips and top each bowl off with some fresh lime zest and voila! You’ve got yourself a winning snack that everyone will enjoy!

Margarita Popcorn Snack Mix

Ingredients:

  • 16 cups freshly popped popcorn (1/3 cup kernels = 8 cups popped)
  • 6 Tablespoons Barleans butter flavored coconut oil
  • 2 Tablespoons lime juice + zest of 1 lime
  • 2 Tablespoons tequila
  • 2 teaspoons sugar
  • 2 teaspoons Kosher salt
  • 1 cup lime tortilla chips, crushed

Directions:

  1. Pop popcorn kernels and set aside in 2 big bowls. If you’ve never popped kernels before, just grab a large pot and place 2 Tablespoons vegetable oil in bottom. Place 5 kernels in oil and heat over medium-high heat. When the first kernel pops, dump 1/3 cup kernels into pot and shake back and forth (over heat) until popping stops. Repeat once more for a total of 16 cups.
  2. In a small saucepan, add coconut oil, lime juice, tequila, sugar and salt and stir together over medium heat until oil melts and sugar and salt dissolve.
  3. Drizzle liquid equally over both popcorn bowls, sprinkle crushed tortilla chips on top along with lime zest.
  4. Serve with plastic cups and tongs so everyone can fill up their cup!
