Summertime goes hand in hand with grilling.

With a cold (gluten-free) beer in one hand and BBQ tongs in the other, what’s not to love?

The typical barbecue default is burgers and dogs, but by mid-summer it’s time to shake things up. And we’re doing just that today with a brand new recipe cooked in a totally different way on the grill!

The first thing I noticed was the incredible mix of flavors. I checked the ingredients and it included tomatoes, pineapple, garlic, onion and chili peppers, to name a few. YUM!

I knew I wanted to mix these flavors with some veggies and just let the flavors combine so I grabbed my cast iron skillet and heated it up on the grill.

After the skillet got piping hot, I added some garlic and oil and the sliced sausage. (The great thing about these sausages is that they’re already cooked, so this is really just a way to brown them and heat them up).

Next I added my favorite veggies and let everything cook together and viola! Dinner was on the outdoor picnic table in less than 30 minutes.

The best part was the grill was still clean when I finished, so all I had to do was rinse out the skillet and re-season with some oil and cleanup was done!

Sweet & Smoky Chicken Sausage Skillet


  • 1 package (12 oz) Al Fresco Sweet & Smoky BBQ Chicken Sausage, sliced
  • 1-2 Tablespoons oil
  • 2-3 garlic cloves, chopped
  • 1 large zucchini, chopped
  • 4-6 sweet mini-peppers, sliced into rings
  • 1 cup cherry tomatoes
  • 1/3 red or purple onion, chopped
  • salt and pepper, to taste


  1. Place cast iron skillet on grill for 5-10 minutes until very hot.
  2. Add olive oil and garlic to skillet and turn down heat to medium-high for 2-3 minutes.
  3. Add sausage and cook for 7-9 minutes, stirring half-way through.
  4. Add zucchini, sweet peppers, tomatoes, onion and salt & pepper and let cook for 15-20 minutes until vegetables are tender. Stir occasionally.
  5. Close lid for 2-3 minutes to get extra smokey flavor, then remove from heat.
  6. Serve as is or over quinoa and garnish with parsley.

  5. Since I’m vegetarian I won’t be able to try the recipe myself. BUT I will definitely make something similar with beans instead of chickens, cause the veggies do look delicious!
