Tomato Basil and Goat Cheese Omelet

Tomato, Basil, & Goat Cheese Omelet


  • 2 eggs, whipped with fork
  • 1 oz goat cheese crumbles, divided
  • 6 grape tomatoes, halved
  • 3-4 basil leaves, chopped & divided


Preheat omelet pan on medium heat.  Spray pan with non-stick cooking spray or 1 tsp coconut oil. Pour egg mixture into pan and let it sit for 1-2 minutes.  When egg starts to firm sprinkle 1/2 goat cheese and 1/2 basil leaves on top.   After 1-2 minutes flip 1/2 omelet on top of other half and continue cooking until firm.  Remove from pan and top with tomatoes and remaining goat cheese and basil.

Serve with your favorite fruit for a healthy start to your day!
