For a healthier version of the classic “mashed potatoes” try using cauliflower! It’s super easy, tastes amazing, and it’s an easy way to get in that extra dose of vitamins.
Garlic Cauliflower Mash
Ingredients:
- 1 head cauliflower florets
- 8 garlic cloves, minced
- 3 tbsp. butter or butter-substitute
- Kosher salt & fresh ground pepper, to taste
Directions:
Stream cauliflower florets until tender. Drain, return to pot and mash until smooth. Add in 1 tablespoon butter, salt and pepper (to taste) and mix well. Set aside.
Melt 2 tablespoons butter in large pan and add in minced garlic. Cook until golden, about 5 minutes. Add mashed cauliflower to garlic pan, mix together and re-heat until warm. Sprinkle with salt and pepper and serve immediately.
