For a crunchy snack that’s also healthy - munch on these legumes to get a boost of dietary fiber, protein, and iron!
Chickpea Crunch
Ingredients:
- 1 tbsp extra virgin olive oil
- 1/4 tsp ground cumin
- 1/4 tsp ground ginger
- 1/4 tsp paprika
- 1/2 tsp Kosher salt
- One 15-oz can chickpeas, drained & rinsed
Directions:
Preheat oven to 425°. In medium bowl, mix together oil and all spices. Toss chickpeas with mixture until coated evenly. Spread out on baking sheet and cook until golden and crunchy (about 30 minutes). Let cool completely, then store in air-tight container for 1-2 weeks.
