This month I’m going all in with Paleo and although I’ll be sticking to the basics (no real recipes required), I do plan on spicing things up a bit on the weekend.

Alright - here it is - my first every Paleo recipe. Enjoy and SHARE it if you love it!
Paleo Peach and Banana Pancakes
Ingredients:
- 1/4 cup Bob’s Red Mill Organic Coconut Flour
- 1/4 tsp Kosher Salt or Sea Salt
- 1 small peach, mashed
- 1 small banana, mashed
- 1 tsp baking soda
- 1/4 teaspoon cinnamon
- 4 eggs, room temperature
Directions:
Mix all ingredients together and beat by hand for 2 minutes. For smoother texture mix with hand mixer.
Pour mixture into a non-stick pancake pan with spoon or measuring cup with spout. Make sure to make small silver dollar pancakes. Bigger pancakes will be harder to flip due to the coconut flour. You may use a small amount of coconut oil to help prevent it from sticking.
Let pancakes sit until you see bubbles around the edges, then flip. Cook for an additional minute or two and serve as is or with a small amount of pure maple syrup, topped with your favorite fruit!
