Quick & Easy South West Tostadas

 

It seems as if the days are getting shorter and shorter and I’m always running out of time!  And because I teach DDP Yoga at night when everyone gets out of work - my nights are often busier than my days!

One of the best ways I’ve discovered to make the most of my time during the week is to make

Super fast & healthy meals!

Dinners that take just a few ingredients and are quick to prep and serve. Having a hungry 3-year old is also another great reason to master quick recipes because we all know that a happy toddler = a happy home!  🙂

If you haven’t heard of Sunshine Burgers, you’re about to.  These organic veggie burgers are gluten-free, soy-free, vegan, non-GMO and are already cooked & browned so all you have to do is reheat and enjoy.  Don’t let the fact that they are veggie burgers scare you - these burgers have incredible flavor from garden herb to loco chipotle to shiitake mushroom.  With 8 different burgers to choose from you’re bound to find one that is perfect for you.

BUT we’re not making any burgers today - we’re making tostados - so why are we talking about them?

Because one of the best tricks to making quick meals is to incorporate foods that need very little prep & cook time.

So - here’s a pic of how the burgers look right out of the box.  Each flavor comes as a set of 3 and are frozen.

For this recipe - all I did was take 2 of the burgers, wrap them in a paper towel and defrost them for 15 seconds in the microwave.  Then I crumbled them into a small frying pan and heated them up for 1-2 minutes.  That’s it!  The rest of the recipe involves a little dicing and dinner is on the table in less than 5 minutes!  If you’re not in the mood to use your stove - just keep them in the microwave and warm for 60-75 seconds.  It’s as simple as that!  ENJOY! 

 

South West Tostadas

Total Time:  5 Minutes - Serves 2

Ingredients:

  • 2 Black Bean South West Organic Sunshine Burgers, thawed
  • 1/4 cup organic refried beans
  • 4 tostadas
  • handful organic arugula
  • 1/4 cup tomatoes, diced
  • 1/2 avocado, diced
  • 1/4 cup manchego cheese, shredded
  • 1 green onion, chopped

Directions:

Thaw Sunshine Burgers in microwave for 15 seconds or in refrigerator overnight.  Crumble into small frying pan and warm over medium heat for 1-2 minutes and set aside.

Smear refried beans on tostadas and heat in microwave for 30 seconds.

Top tostadas with arugula, diced tomatoes, avocado, crumbled burger, manchego cheese and green onions.
