I am so excited to part of the 4th Annual Great Food Blogger Cookie Swap hosted by Love & Olive Oil and The Little Kitchen.
Every year the FB Cookie Swap brings together food bloggers from around the world in celebration of all things scrumptious! Once you sign up and list your food allergies/intolerances, you are given three food bloggers to bake for. Each one of your recipients will get one dozen homemade cookies from you and in turn, you will get three from 3 other food bloggers. And today - we get to post our recipes and share the love for all to enjoy this holiday season.
Even better - this year the FB Cookie Swap partnered up with Cookies for Kids’ Cancer again so we’re not only supporting each other, but a great cause too!
One of the rules was to create a brand new recipe, so this year I introduce Christina’s Christmas Crescents. Enjoy!
Christmas Crescents (gluten-free)
Makes: 2 dozen crescents
Ingredients:
- 8 oz gluten-free almond paste
- 1 egg white
- 1/2 cup confectioners sugar
- 1 cup gluten-free dark chocolate, melted
- sprinkles
Directions:
Preheat oven to 300° and line cookie sheets with parchment paper. Mix almond paste, egg white, and sugar together in food processor until dough-like .
Remove and place on wax paper and freeze for 15-20 minutes.
Dive dough in half and roll each section into an 8″ roll. Slice each roll into 12 pieces and shape into crescent shapes with fingers.
Place on cookie sheets and bake for 20-25 minutes or until edges are golden brown.
Cover wire cooling racks with damp paper towel and transfer parchment paper and cookies to rack. Let cook completely then dust with confectioners sugar. Drizzle dark chocolate over crescents and top with sprinkles.
