Avocado is one of the world’s perfect foods. They are a ‘good fat’ that is heart-healthy, packed with fiber, and is known to help with arthritis, weight loss and help prevent cancer.
This was sooo easy to make and there are so many variations you can create. Have fun with and enjoy! 🙂
Bacon Egg Avocado Cups
Serves 2
Ingredients:
- 1 avocado, ripe
- 2 eggs
- bacon crumbles, 1 slice
- salt & pepper, to taste
- chives, optional topping
Directions:
Preheat oven to 400°. Slice avocado lengthwise in 2 and remove pit. Scoop out approximately 1 Tablespoon avocado from each whole to make room for the eggs. Place avocados in muffin tin. Crack one egg into small bowl, but keep yolk in shell. Place yolk in avocado hole and then use shell to scoop up some egg white and fill to top of hole. Repeat on other half. Place in oven and bake for 15-20 minutes until whites are done and yolk is cooked to your preference. Remove from oven, let cool 3-5 minutes, sprinkle with crumbled bacon pieces,chives and salt & pepper. Enjoy!
Note: Scoop out a bigger whole if you want to place ingredients such as peppers, onions, ham, sun-dried tomatoes, etc under egg. Continue cooking as noted above.
