As a mom, I’m always trying to find new and creative ways to keep snacking healthy with my little one. From yogurt covered frozen blueberries to fruit popsicles - anything goes!
I think the key is variety and fun! Switching up your little’s ones snacks each day and/or making them fun to eat is a sure way to keep healthy food in their diet (this pretty much goes for us adults too)!
This weekend I spent so many hours in the kitchen for meal prep and I guess it got my creative juices flowing. I’m not one of those moms who can make a simple afternoon snack look like Monet on a plate, but I can use a little creativity to bring a twist to a classic snack.

APPLE SURPRISE
Ingredients:
- 1 apple
- 2 Tablespoons Natural Peanut Butter
Directions:
Slice an apple in half.
Using a spoon, scoop out a the core of both halves and discard. (I used a serrated grapefruit spoon for easier removal of seeds and core).
Spoon natural peanut butter inside each half and wrap with saran wrap.
Place in freezer for 15 minutes and then move to refrigerator for an additional 15 minutes.
When snack time comes, just slice and serve!
