Homemade Chocolate Shell

If I had to pick a favorite dessert, I think ice cream would be in my top 3. Add some chocolate shell to that ice cream and it might jump to my top 2!

I was always so fascinated with chocolate shell as a kid. I would always try to apply it in different patterns so that it would be easy enough to “break” yet still have enough to make it into every bite of that delicious ice cream.

My son recently has his first experience with this ice cream topping a birthday party and he loved it! (of course) But as a mom, I knew there had to be a better version of this than what was available on the shelf at the grocery store so I took it to the kitchen!

To keep this gluten-free & diary free I chose some of my favorite mini chips from Enjoy Life (they’re gluten-free, nut-free, soy-free and diary-free)! Then I added some organic coconut oil and a little vanilla extract and viola! My childhood favorite dessert topping recreated.

To give this shell a little pop I chose a delicious green tea non-dairy ice cream made from coconut milk from So Delicious. Enjoy!

Homemade Chocolate Shell

Makes: 1/2 cup

Ingredients:

  • 1 cup Enjoy Life mini chocolate chips
  • 2 Tablespoons organic virgin coconut oil
  • 1 teaspoon pure vanilla extract

Directions:

Place the chocolate chips and coconut oil in a bowl and microwave for 30 seconds. Stir and repeat until smooth (90-120 seconds usually). Stir in vanilla extract and pour over ice cream. If there’s any extra shell, store in container or squeeze bottle and refrigerate. For round 2 - warm container in bowl of hot water until liquid again.

Note: You can use a double-broiler for this. Just melt the chocolate chips and coconut oil together and then add in the vanilla extract when finished. Pour over ice cream and enjoy!
