There’s nothing quite as refreshing as a cold and delicious popsicle in the middle of summer!
But most of the ones you can get at the store are packed full of sugar and a bunch of other ingredients you can’t pronounce.
So, it was time for me to come up with a simple recipe for popsicles that was low in sugar, but also gluten and cow-dairy free.
I knew I wanted it to be creamy, but it also had to look appetizing to get my little boy to eat it, so I took a little cashew milk, blended in some agave and popped in some fruit for color and Voila! Super-simple and yummy popsicles.

Fruit Popsicles
Ingredients:
- 1 cup unsweetened cashew milk
- 2 Tablespoons blue agave (or honey)
- diced fruit of choice
Directions:
- Dice fruit and set aside.
- Mix milk and agave together in blender.
- In 6 popsicle containers, fill 3/4 with milk mixture and toss in fruit of choice.
- Cover with popsicle top and freeze for 6 hours.
