Simple Sausage Supper
This meal is great for company because it’s simple to make, affordable, and delicious! The only downside is you won’t have any leftovers! (serves 4)
Ingredients:
- 4-8 links of your favorite all-natural spicy sausage (we like Aidelle’s Organic Cajun Style)
- 1 sweet potato, peeled & cubed
- 4-6 petite red potatoes, quartered
- 1 pound fresh green beans, ends snapped off
- 1 sweet onion, diced
- 1 Tablespoon extra virgin olive oil
- 2-4 cloves garlic, minced
- Salt, Pepper, & Paprika, to taste
Directions:
Preheat oven to 425°. Slice sausage and place in bottom of 13″ x 9″ pan. In large pan - saute potatoes in olive oil for 5 minutes and then place on top of sausage. In same pan, saute green beans and garlic for 3 minutes, then add to sausage. Place diced onion over sausage and top with Kosher salt, black pepper, and paprika. Bake for 25 minutes, covered with foil. Remove foil and bake for an additional 10 minutes or until potatoes are done. Serve with a lettuce wedge or fresh green salad.

I love to use sausage for a quick meal too! Haven’t tried it with green beans and sweet potatoes - will have to try adding those veggies
