Thirsty Thursday Cool Down

With 90 degree weather down here in south Florida we are in need of a LOT of water, but it’s also nice to have a refreshing drink from time-to-time.  Here’s one of my favorites that you can enjoy (with or without the alcohol) that’s full of fresh fruit, veggies, and herbs.  Cheers!

Honeydew Cucumber Mint Cooler

Honeydew, Cucumber, & Mint Cooler

Serves 8 - Total Time: 45 minutes, with chilling

Ingredients:

  • 1 honeydew melon
  • 1 cucumber, peeled & chopped
  • 1 cup fresh mint leaves
  • 1/2 cup fresh lime juice
  • gin (optional)
  • mint leaf (garnish)

Directions:

Puree honeydew, 1/2 cucumber, and mint leaves in a blender until smooth.  Strain through a fine-mesh sieve into a pitcher.  Add lime juice, remaining cucumber and chill for 30 minutes.  Stir well and serve over ice with a fresh mint leaf (and a splash of gin if you’re feeling froggy).

Servings: 1

INGREDIENTS:

  • 1 green tea bag
  • Juice from 1/2 lime
  • 1/2 teaspoon agave nectar
  • Handful of ice

DIRECTIONS:

  1. Boil 1.5 cups water and steep green tea for 5 minutes.
  2. Add in lime juice and agave nectar.  Stir until mixed.
  3. Add a handful of ice and enjoy!
